Gastronomy is given pride of place at the Hôtel Royal.
This policy is spearheaded by a team of devoted individuals including the Sommellerie director Loïc Chavasse Frette and Executive Chef Patrice Vander, along with the kitchen brigade, the dining room staff, the bar staff and the gardeners. Keen to enhance their guests’ culinary experience, the hotel’s staff have put together a range of exclusive gourmet products. Each of these exceptional dishes has been created with the greatest care, working closely with specially selected local producers and ingredients harvested from the hotel’s 3,000 m² vegetable garden and 47-acres of parkland. These producers, selected for their expertise and know-how, have come up with some unique recipes, exclusively available in the Hôtel Royal’s restaurants and bar.

Hotel Royal's Collection

These products are available as limited editions in our “Collection” range and celebrate the generosity of Haute-Savoie’s terroir, the expertise of local producers and the talent of the Hôtel Royal’s staff. 
Because they are on sale at the Hôtel Royal, guests can take home an authentic souvenir of their stay at the iconic Évian-les-Bains Palace establishment.

Beekeeping – Kitchen garden honey

 

The kitchen garden honey comes from the ten hives in the hotel grounds, where the bees forage on a multitude of species, giving this honey its unique flavour.

Harvested with respect for biodiversity, this high-quality honey is used here in the kitchen and in cocktails at the bar.

Winegrowing – La Cuvée Complicité

 

A cru concocted by the Sommellerie director Loïc Chavasse-Frette and the Delalex brothers, winemakers from an estate set on the slopes of Lake Geneva. Fuelled by a love of wine and the joy of tasting it, together they have created a dry, fruity white wine bursting with delicate aromas. Made from Chasselas grapes and vinified in sandstone vats, it is light and full-bodied on the palate. A fine partnership that has also given us a red wine cuvée.

The local blonde ale

 

The range also includes a wholly local blonde ale. After the success of the first version made with Draillant saffron in 2019, Hôtel Royal has revived the concept and teamed up with brewer Martin Rouleau. The result is a delicately bitter beer that combines the herbal notes of hops with the slightly fruity notes of pineapple sage and the sweetness of honey. Ingredients sourced as close as possible to the hotel, in its own vegetable garden.

The Collection Gin

 

This limited edition gin can be tasted in the Hôtel Royal’s bar or purchased to take away. 
It is made with blood orange pulp, hops and verbena from our vegetable garden.

The “Collection” products also feature in the signature rituals exclusive to the Les Fresques Michelin-starred restaurant. Take, for example, the Collection 100% Arabica coffee from Ethiopia and the Galapagos Islands.
Painstakingly crafted by roaster Vincent Ballot, recipient of the Meilleur Ouvrier de France national craft award, this perfectly balanced blend is an invitation to embark on a fascinating journey of flavours. Opening with notes of brown sugar and caramel, the tasting continues with hints of red fruit and jasmine.

The Collection of teas was developed in partnership with flavourist Carine Baudry and French tea house, nunshen. The black tea from Nepal, flavoured with Damascus Rose, is inspired by the sublime rose garden in the hotel grounds. It is a majestic blend of honey, waxed wood, candied citrus fruit and red berries, with the captivating scent of rose. Created especially for Les Fresques, these exclusive items will awaken your taste buds after a gourmet meal.
